Some delicious dressings with extra virgin olive oil to add to meat, fish vegetable and pasta dishes.
Herbs dressing
Ingredients
100g chopped fresh parsley
1 teaspoon dried oregano
a teaspoon of thyme
1/2 chopped chilli (optional)
1 tablespoon white wine vinegar or sherry
100ml extra virgin olive oil
Salt and freshly ground black pepper
Herb dressing: Put all the ingredients in a bowl and mix vigorously until everything is well integrated. We reserve ( Cornicabra recommended)
Olives and anchovies dressing
Ingredients for the olive and anchovy dressing:
30g pitted black olives
4 anchovies
2 boiled eggs
100ml extra virgin olive oil
1 tablespoon white wine vinegar or sherry
Olive dressing: Chop the olives and chop the anchovies. Transfer these two ingredients to a bowl or jar. Add the oil, vinegar and a pinch of salt (without going overboard because the anchovies are already salty) Grate the eggs that we have previously cooked and add them to the vinaigrette. We mix with energy and reserve.( Mis Raices Empeltre recommended)
Spicy dressing
Ingredients for the spicy dressing:
3 garlic cloves
1 chilli pepper
A few leaves of chopped fresh parsley
100ml extra virgin olive oil
1 tablespoon white wine vinegar or sherry
Salt
Spicy dressing: Peel and slice or chop the garlic. We chop the chilli. Heat the oil in a saucepan over medium heat. Fry the garlic until it begins to brown. Add the chilli and parsley. Turn off the heat and transfer the mixture to a bowl and when the temperature of the oil drops, add the vinegar and salt. We mix with energy and reserve. ( Picual Montsagre recommended)
Peppers and pine nuts dressing
Ingredients
2 piquillo peppers
100ml extra virgin olive oil
A tablespoon of white wine vinegar or sherry
1 teaspoon of thyme
Salt (to taste of each house)
Pepper and pine nut dressing: Chop the peppers. In a bowl, put the peppers and pine nuts. Add the thyme, salt, extra virgin olive oil and vinegar.( Hojiblanca recommended)
Mustard dressing
100ml extra virgin olive oil
1 tablespoon old-fashioned mustard or Dijon mustard
A tablespoon of white wine vinegar or sherry
Salt and freshly ground black pepper (to taste)
Mustard dressing: Put all the ingredients in a bowl and mix vigorously. We serve to accompany vegetables, meat and fish.
