Olive oil profile:

 Fruity of green olive of medium-high intensity.

In nose it is very fresh with vegetal and fruity aroma like green banana, artichoke . In mouth those aromas are reaffirmed.

Astringency is perceived, medium bitter and spicy in mouth and throat but without being aggressive. Brutal final aftertaste.

Great balance between nose and mouth. Power, persistence and excellence are its most striking qualities.

High in polyphenols : 589mg/kg

Harvested at night assuring cold press process from tree to bottle always below 27 degrees.
